A true classic

Huehuetenango in Guatemala is one of the gems of Central America, where delicious coffee comes from time and time again. The area, which is also just called Huehue, is known for coffee which has a silky mouthfeel, and fullness and sweetness and fruitiness often a la citrus fruits like especially orange.


The coffee comes from the farm Finca Wipoj, and is grown by Pedro Ramirez who took over the farm after his father in 1989. The farm has grown from a small lot to today being approx. 2.8 hectares.

Pedro has a strong focus on securing its coffee plants in the best and most sustainable way. This is done, among other things, by ensuring that the coffee is "shade grown" - which means that it is grown in the shade of other trees. In this case, the local variety is Gravilea, which also helps to ensure good biodiversity and good conditions for the rest of the plant and animal life. The farm is not certified organic, and we'll get back to that later.

The coffee is washed and it gives a really good balance and transparency in the taste. The coffee is depulped and immediately tranfered into fermentation tanks for two days. The temperature is very stable in the area, which makes the process easier to control and ensures a higher quality as well.
