Grown by Jairo Arcilia at Finca Villarazo, this coffee was picked and transported the same day to La Pradera to be processed using our importers special EF2 natural processing protocol. This lot was exposed to a dry anaerobic fermentation of 24 hours. The coffee was then placed inside grain pro bags for 60 hours maintaining temperature below 22 degrees celcius by placing the coffee inside a water tank. Later the coffee was placed on raised beds below 35 degrees celcius until the ideal moisture content was achieved.
This microlot is 100% Tabi. This is a new variety developed by the FNC, crossed between Bourbon, Typica and Timor Hybrid. The word Tabi means "Good" in the Guambiano dialect.
We chose this coffee for the second release in our Christmas Special series for December 2020 due to it's vanilla and orange flavours. Its complexity is very unique, with a gentle sparkling acidity. This is the first coffee of the Tabi variety we have worked with and we're very excited by the results.
